Green tomato relish

Can it get any better than fried green tomatoes? Maybe, if you think relish!  Green tomatoes that still haven't ripened can be used in all kinds of delicious recipes, whether they are left over in the fall or you want to grab them off the vine before they begin to change color and ripen.

Here's one of our family favorites - enjoy!

Green Tomato Relish Recipe

Ingredients:
In a food processor, grind the following:
12 cups green tomatoes (ground)
3 cups onions (ground)
3 green peppers (ground)
3 red peppers (ground)
1 hot pepper (ground)
Mix all above together. Pour hot water over all and drain well, overnight is best.

Syrup:
2 1/2 cups white vinegar
1 1/2 cups water
7 cups sugar
1/4 cup salt
3 tablespoons mustard seed
1 tablespoon celery seed
1/2 teaspoon turmeric

In a large pot, pour syrup mixture over the ground tomato, pepper and onion mixture which has drained overnight. Cook down for at least 2 hours, then "can" the relish while hot, according to canning relish instructions.

Makes 6 pints.
